Looking for some quick and easy meal ideas? I’ve been trying out some recipes from the Idaho Potato Commission’s website recently, and enjoying some tasty new meals with simple roasted potatoes.
Just chop them up, toss with a little olive oil or use spray-on olive oil, put them on a cookie sheet ( I line mine with aluminum foil), and sprinkle some rosemary on top. Bake at 350 degrees until fork tender. Now the fun begins!

This is the ultimate comfort food. If you don’t have any heavy cream or whole milk on hand, you can use whatever milk is in the fridge. Add some leftover ham, bacon or sausage. We love having leftovers for breakfast!
Need a quick lunch? Use some of those roasted potatoes to make Quick Idaho Potato Chili (click here for recipe)
Feeling adventurous? Try roasting those potatoes with red peppers and egg plant for an Italian pasta dish!

Hi there Mimi! I came to you from BlogHer as I’m doing NaBloPomo as well. In Germany they have lots of different kinds of potatoes…I just discovered white sweet potatoes! I’m experimenting with them so will be trying out your recipes for sure!
