Italian Sausage, Cheddar, and Zucchini Flat Bread with Kerrygold’s Skellig

sausage-flatbread-Skellig-squaresHere’s an idea for a quick supper or a party finger food.  The key ingredient is Kerrygold’s  Skellig cheddar cheese… a creamy, full-flavored cheddar with the sweetness of apples.   Skellig  melts quickly…bubbling in the broiler…transforming flat bread into a cheesy indulgence.

sausage-sauteBrown one pound of mild Italian sausage in a skillet with 1/2 a sliced onion and 12 crimini mushrooms.  When the sausage is browned, add one thinly sliced zucchini.   Turn down the heat, cover the skillet and cook until the zucchini is transparent and tender.

Skellig-on-flatbreadGrate 1/2 a 7 oz.  block of Kerrygold Skellig cheddar cheese.  Sprinkle the grated cheese onto the flat bread.

sausage-and-zucchini-flatbreadDistribute the sausage, mushroom, and onion mixture on top of the cheese, then put piece of zucchini on top.  Add a little more grated Skellig cheese on top.

flatbread-sausage-SkelligPreheat the broiler to medium high or 550 degrees.  Place the flat bread on a cookie sheet and broil for 2-3 minutes, watching as it cooks.  Take the flat bread out when the edges are brown and the cheese is bubbling.   Cut with a pizza cutter.

This one is a keeper, a quick and easy substitute for pizza!

Italian Sausage, Skellig Cheddar, and Zucchini Flatbread

Ingredients:
1 lb. mild Italian sausage

12 crimini mushrooms

1/2 onion, sliced

1 large flat bread

1/2 of a 7 oz. package of Kerrygold Skellig cheddar cheese, grated

Directions:

Preheat broiler to 550 degrees or medium high.

Brown the sausage, onion and mushrooms in a skillet over medium high heat.  Lower the heat.  Add the thinly sliced zucchini, cover and let the zucchini cook through. Place flatbread onto a cookie sheet.  Sprinkle most of the  grated Skellig cheese onto the flat bread, all the way to the edges.  With  a slotted spoon place sausage mixture on top of the cheese.  Add pieces of zucchini on top.  Sprinkle more grated Skellig cheese on top.  Put into the broiler for 1-2 minutes at 550 degrees. Cut into pieces with a pizza cutter.
