Cheddar and Onion Biscuit Bites with Avocado

biscuitbitesandcheeseNow that the cooler weather is here, I’m looking for some quick and easy ideas to serve with soups or as an appetizer.   These Cheddar and Onion Biscuit Bites with Avocado are full of flavor,  perfect for dunking into a cup of soup or serving with a big bowl of hot chili.   Kerrygold Skellig cheddar cheese is the secret ingredient that makes all the difference in these bite size biscuits stuffed with a small wedge of fresh buttery  avocado.

Sift 2 cups of flour with 1 1/2 tsp baking powder. Using a pastry cutter, cut in t tablespoons of butter.   Add  1 cup grated Skellig cheddar cheese,  1/2 cup cooled sautéed onions, 2/3 cup milk and  1  tsp dried thyme.  Mix with a spoon and then use your fingers to knead it just until the dough holds together.

Use a teaspoon to form a balls of dough and place on an ungreased cookie sheet.  Bake for 10-12 minutes at 400 degrees.

The biscuit bites will be golden brown when they’re done.

bakedbiscuitsWhile the biscuits are still warm,  cut a ripe avocado into bite-size wedges.  Make a slit in the top of each little biscuit and push an avocado wedge into the slit.

Creamy pieces of avocado on top of sweet cheddar and onion biscuit bites … so good, I’ve been nibbling on them as I write this post.

Cheddar and Onion Biscuit Bites with Avocado

Ingredients:

2 cups flour

1 1/2 teaspoons baking powder

4 Tablespoons Kerrygold butter

1 cup grated Kerrygold Skellig cheddar cheese

2/3 cup milk

1/2 cup sautéed onions (cooled)

1 teaspoon dried thyme

1/2 fresh ripe avocado

Directions:

Sift the flour and baking soda together into a mixing bowl.  Cut the Kerrygold butter into small cubes and cut into the dry ingredients with a pastry cutter.  Add the grated Skellig cheese,  milk, onions and thyme.  Stir together with a spoon and then use your fingers to knead the dough until it just holds together.   Use a teaspoon to form balls about an inch in diameter.  Place on an ungreased cookie sheet.  Bake for 10-12 minutes in 400 degree oven.   Recipe makes 30 biscuit bites.

Cut the avocado into bite size wedges.  Cut a slit into each biscuit  and insert a little wedge of avocado.
