Happy New Year!   I made this Vegetable Beef and Barley Soup today because the weather has been really cold here in San Diego county. It’s an easy soup with lots of flavor and healthy vegetables.   I’ve been craving the rich beefy flavor of  my mother’s homemade soup as we were growing up in Vermont.

Quiche with Roasted Cipolline Onions

Roasted Onion QuicheHave you tried cooking with Cipolline onions?  These cute little onions are perfect for roasting,  caramelizing to become beautiful little orbs that add homemade flavor to stews, sauces, or salads.  Yesterday  I put together  a Roasted Onion Quiche with bacon, cheddar, sautéed mushrooms, and some sliced roasted Baby Gold potatoes.  Aren’t those little onions pretty on top?  They’re full of sweet onion flavor too. Chicken Tamale Potato Salad with California Avocados

Today I tried a new potato salad using Del Real Foods Chicken Tamales in Green Sauce.  Remember when I made the Beef Tamale Pie with their Beef Tamales?   Now that it’s summer, I’m craving potato salad,  and I’m looking for ways to add flavors and ingredients for a one-bowl dinner that can be made ahead of time.  Del Real Foods is hosting a recipe contest, so I requested some more of there products to try.  Continue reading
