Warm Quinoa Salad with Avocado
Only four ingredients, and loads of nutrition!

Ingredients
- 1 cup cooked quinoa or you can substitute brown rice
- 1/4 cup mild or medium salsa tomatoes, onions, cilantro,etc.
- 1/2 cup raw spinach
- 1/2 ripe California avocado
Instructions
- Heat the tomato salsa in a small sauce pan. Add the spinach leaves. When the spinach is wilted, add the cooked quinoa and stir until warmed through. Serve warm with chunks of ripe avocado on top.
Here’s a quick recipe that is healthy and delicous! I had it for lunch today and couldn’t resist sharing because I enjoyed it so much! If you have a ripe avocado and some cooked quinoa (or rice), you can put it together in just a few minutes!
