Warm Quinoa Salad with Avocado

  • 1 cup cooked quinoa or you can substitute brown rice
  • 1/4 cup mild or medium salsa tomatoes, onions, cilantro,etc.
  • 1/2 cup raw spinach
  • 1/2 ripe California avocado


  • Heat the tomato salsa in a small sauce pan. Add the spinach leaves. When the spinach is wilted, add the cooked quinoa and stir until warmed through. Serve warm with chunks of ripe avocado on top.
