Last week The Farmer and I were invited to our son’s place for supper, and I agreed to bring a dessert. I planned to make the Maple Almond Apple Crisp that I posted last week. When I went to Trader Joe’s to buy more sliced almonds, I found these Dry Roasted Honey Almonds (sliced) and decided to modify the recipe slightly. Since the almonds are sweet, I eliminated the brown sugar, and added a little nutmeg with the cinnamon. I decided to leave out the all purpose flour and keep just the almond meal…it turned out crumbly and crunchy with delicious flavor!
This new version is something special! My son and his girlfriend shared their batch with her parents, who even sent an e-mail to tell me how much they enjoyed it. I’m going back to Trader Joe’s today to buy more apples and honey roasted almonds so I can make some this weekend. And yes, I’ll share the recipe with you too!
- Apples:
- 6-8 large Granny Smith apples, sliced or cubed
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 4 Tbsp pure maple syrup
- Crunch:
- 2 cups old fashioned rolled oats
- 1/2 cup almond meal
- 1/2 package honey roasted sliced almonds
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup melted butter
- Preheat oven to 350.
- Wash the apples and remove the cores. Slice or cube into a large bowl.
- Combine cinnamon, nutmeg and maple syrup with the apples until coated.
- Spread apples in buttered baking dish.
- In a bowl, combine oats, almond meal, sliced almonds, cinnamon and nutmeg.
- Mix well.
- Add melted butter and stir to coat the dry ingredients.
- Spoon the topping on top of the apples and spread to cover.
- Bake at 350 degrees for 50 minutes.
- Serve warm or cool with vanilla ice cream or yogurt.
