Chinese Chicken Salad…the easy way!

Easy Chinese Chicken Salad with Avocados

The weather has been in the 80’s this week in San Diego!  It feels like summer!  We’ve been enjoying this delicious salad throughout the warm holiday vacation week.   It feeds a crowd,  takes very little time to prepare, and  the ingredients can be purchased in one store.   It’s a great side dish for a party or a main dish for weeknight supper.

The lettuce is artisan lettuce grown in the USA…beautiful, fresh and tender.    It comes in a clear plastic box in the produce section of Costco.  Use the whole box for a double recipe, or half the box for a big bowl like I made for this post.

I washed and chopped the lettuce into a large salad bowl.   The leaves are fresh and tender as if they were just picked.  Then I pulled the rest of the ingredients out of the fridge.  They come in a kit at Costco!  A double kit…so the packets shown here are just half of what was in the package.   Cooked chicken,  sliced almonds,  fried wontons,   noodles and delicious dressing are all included.

All the ingredients for the salad come in a kit available at Costco!

Just sprinkle all those ingredients on top of the lettuce,  reserving the dressing to serve on the side.    There is just enough in the packet for about 3 heads of the artisan lettuce.   Sometimes I toss the dressing with the salad, but our family prefers to serve it in a small pitcher on the side.

Do you have any ripe avocados in your kitchen?

Since we live on an avocado ranch, we rarely have a day when ripe avocados aren’t available in the kitchen.  These are the Reed variety…there are a few left on the trees,  and even though the season for Reeds is officially over,  we are still enjoying the ones we have left.   When they’re ripe, they need to be eaten right away,  so we sliced some to put on top of the salad.

It’s so nice to have something easy to prepare that everyone is glad to eat for supper during this warm winter weather!  By next week we’ll probably be back to soups and slow-cooker meals.  For now,  I’m just enjoying the last days of holiday vacation with the family.

  1. We’ve been in a deep freeze here in New England but it promised to reach a balmy 30 today. That salad looks great for any time of year. And the great thing about it is that we can make it here in New England despite our sad selection of fresh produce. Thanks for the easy recipe!

  2. Yum! Those Avocados look GREAT! Was just checking out your blog to see what you have posted since class ended! Happy New Year!

  3. Hi Mimi,
I love the dressing that goes in the Chinese chicken salad kit that Costco carries. Sometimes I get it, and I have to “withdraw” from the dressing. Is that fabulous dressing online anywhere or can I get it from you! It is absolutely fabulous. I have been a balsamic vinegar dressing person for years but now love this Asian dressing.
Oh, and I’ve lived in Vermont twice in my life…in the 70s and 80s, teaching nursing for UVM, and most recently as a nurse practitioner in St. Albans. now back in WI but love the state!

    • We have tried other dressings for Chinese chicken salad too…but the one from Costco is delicious. We often use all the chicken in ne salad with one packet of dressing and then save one packet of the dressing to use with our own grilled chicken or even salmon! It’s all delicious with California avocados! No, we don’t sell salad dressing…we raise avocados on our farm. Maybe we could figure out how to duplicate that yummy dressing ! Glad you know Vermont…I’m so happy to be spending a whole month here with my mom this summer!
