The weather has been in the 80’s this week in San Diego! It feels like summer! We’ve been enjoying this delicious salad throughout the warm holiday vacation week. It feeds a crowd, takes very little time to prepare, and the ingredients can be purchased in one store. It’s a great side dish for a party or a main dish for weeknight supper.
The lettuce is artisan lettuce grown in the USA…beautiful, fresh and tender. It comes in a clear plastic box in the produce section of Costco. Use the whole box for a double recipe, or half the box for a big bowl like I made for this post.
I washed and chopped the lettuce into a large salad bowl. The leaves are fresh and tender as if they were just picked. Then I pulled the rest of the ingredients out of the fridge. They come in a kit at Costco! A double kit…so the packets shown here are just half of what was in the package. Cooked chicken, sliced almonds, fried wontons, noodles and delicious dressing are all included.
Just sprinkle all those ingredients on top of the lettuce, reserving the dressing to serve on the side. There is just enough in the packet for about 3 heads of the artisan lettuce. Sometimes I toss the dressing with the salad, but our family prefers to serve it in a small pitcher on the side.
Since we live on an avocado ranch, we rarely have a day when ripe avocados aren’t available in the kitchen. These are the Reed variety…there are a few left on the trees, and even though the season for Reeds is officially over, we are still enjoying the ones we have left. When they’re ripe, they need to be eaten right away, so we sliced some to put on top of the salad.
It’s so nice to have something easy to prepare that everyone is glad to eat for supper during this warm winter weather! By next week we’ll probably be back to soups and slow-cooker meals. For now, I’m just enjoying the last days of holiday vacation with the family.
