Cabot Creamery Cookbook and Cheese Giveaway!

Cabot Creamery CookbookWho loves Cabot cheese?  I do!  I grew up not far from Cabot, Vermont and still enjoy driving over to visit the creamery.  Want to win a copy of their new cookbook and some scrumptious Cabot cheeses?  Of course you do!

If you have never visited Cabot, Vermont,  be sure to read this post about my visit in the summertime! Cabot cheddar cheese has been a family favorite for as long as I can remember.  We carry 3 lb. bricks of Seriously Sharp Cheddar in our suitcases when we return to California from Vermont!   Of course, that isn’t really necessary now that Cabot cheeses are available in grocery stores all over the USA.

The Cabot Creamery Cookbook

Cabot Creamery recently released this gorgeous new cookbook!  There are so many tempting photos and mouth-watering recipes in this book; comfort food for all occasions using Cabot cheeses, butters and yogurts.  “Simple, Wholesome Dishes From America’s Best Dairy Farms” is the perfect description on the cover of the book!   I decided to try out a couple of recipes for our Easter dinner, and they were both big hits!

Here is Echo Farm’s Au Gratin Potatoes with Cheddar-Stout Sauce.   I used our local Stone Brewery’s Smoked Porter in the sauce, and of course the potatoes were from Idaho!  Seriously Sharp cheddar from Cabot made the sauce so tasty!

Apple-Cheddar Mini Phyllo Quiches

For an appetizer we had Apple-Cheddar Mini Phyllo Quiches, along with deviled eggs.  The recipe was so quick and easy! I made these on the day before our party and just reheated them when it was time to eat.  I heard lots of compliments too!  The pastry shells are purchased frozen and thawed according to instructions on the package. I baked them until they had risen, pushed down the center and placed a little piece of apple in each shell.  Then I beat some eggs with half-and-half, seasoned with salt, pepper, and nutmeg. Just a little of the egg mixture was poured  into each shell, then  topped  with some grated Cabot cheddar cheese and popped back into the oven.  Want the full recipe?  You’re going to need this book!

Cabot Cheddar Breakfast Casserole

When the mini-quiches were all done I still had some of the egg mixture left, so I made a little breakfast casserole!  I tore up some olive and cheese bread slices,  layered with Cabot sharp cheddar cheese, poured the eggs over the bread and cheese, then baked!  Sorry I didn’t get a photo…it was so good we ate it right out of the oven!
