Avocado and Sausage Caesar Salad recipe

Today I want to show you a quick and easy salad that is one of my “insurance policy” recipes.   I keep certain foods in the freezer or fridge for times when we need to eat in a hurry and don’t want to make a big production out of dinner.   Artisan sausages are one of those items!   There are so many different sausages available now, and I love to try the different flavors.   Today I  happened to find this  uncured apple gouda sausage made by Niman Ranch  at the grocery store.

Slice  the sausage into rounds and brown it a little in a skillet.   Do this step when no one is around…at my house  The Farmer eats too many of those delicious sausage pieces right out of the pan!   For the salad just chop up some romaine lettuce and toss with a good Caesar dressing.   Serve the sausages on top of the salad with delicious slices of ripe California avocado.  Add grated parmesan and croutons if you like.

Now that our children are all in their 20’s,  we are never really sure how many people will be coming home for dinner and how many guests they may be bringing.   This is one of those meals that can be expanded quickly… just keep adding to the salad bowl!
