Three Easy Meals with Roasted Potatoes

Looking for some quick and easy meal ideas? I’ve  been trying out some recipes from the Idaho Potato Commission’s website recently, and enjoying some tasty new meals with simple roasted potatoes.

Just chop them up, toss with a little olive oil or use spray-on olive oil,  put them on a cookie sheet ( I line mine with aluminum foil), and sprinkle some rosemary on top.  Bake at 350 degrees until fork tender.  Now the fun begins!

Roasted potatoes are delicious right out of the oven!    Or try one of these easy recipes:

This is the ultimate comfort food.  If you don’t have any heavy cream or whole milk on hand, you can use whatever milk is in the fridge.   Add some leftover ham, bacon or sausage.  We love having leftovers for breakfast!

Feeling adventurous?  Try roasting those potatoes with red peppers and egg plant for an Italian pasta dish!

Roasted Potatoes with Pasta

You may have noticed that the Idaho Potato Commission has a recipe photo contest going on….be sure to take photos of your dishes and submit them!  I entered the contest in the summer with this photo of Roasted  Potatoes and Vegetables with Pasta recipe just for the fun of it …and won!   Just goes to show that if you try something new, you just might be pleasantly surprised!  (I’m still pinching myself…)
